I just made these decadent mini muffins today. I love cakes, especially when they're chocolate-yum!! But when I read the nutrition labels and ingredients, I tend to refrain from eating them - with excruciating pain of course....so I decided to make something that's healthy, inexpensive, and makes your tastebuds sing. I can say these cupcakes are pretty healthy for you, considering each one has only 70 calories and is a good source of fiber and protein. Plus, they're energizing. I enjoyed one as a post-workout snack. For anyone on a clean diet and watching their calorie intake, these little bundles of joy are the best!
Ingredients:
1 banana; smushed
1/2 cup chickpea flour
1/2 cup almond meal
1/4 cup cocoa powder
1/2 Tsp. Baking powder
1 Tbsp. Stevia extract
1 cup milk (I used 1% but go ahead and opt. for skim or non-dairy)
slivered almonds for garnish (optional)
Directions:
1.) Preheat oven to 350F. Grease muffin pan with fat free cooking spray.
2.) In a large mixing bowl, combine banana, chickpea flour, almond meal, cocoa powder, baking powder, and stevia. Mix for about 60 seconds.
3.) Beat in milk and mix until well blended.
4.) Scoop 1/2 cup into each muffin tin.
5.) Bake for 20-30 min. or until muffin tops look firm.
6.) Cool for 10 minutes and enjoy!
**Makes about four muffins**
